This Spicy Egg curry is from South Indian Cuisine blended with boiled eggs mixed with spices serves as sides with Rice and Rotis.

Ingredients
  • Boiled Eggs – 5
  • Red onions large chopped – 2
  • Tomatoes finely chopped – 2
  • Green chilies slit- 3
  • Coriander leaves chopped- 1/4 cup
  • Curry leaves -few
  • Coriander powder – 2 thsp
  • Red chili powder – 2 tsp
  • Curry Powder /Chicken Masala Powder – 2 thsp
  • Turmeric powder – 1 tsp
  • Cloves -2
  • Cardamom -2
  • Cinnamon-2
  • Fennel Seeds – 1 tsp
  • Mustard seeds- 1tsp
Directions
  • Step 1 Take a pan add generous amount of oil then add whole garam masala cinnamon, cloves, cardamom,Fennel seeds, mustard seeds fry for 3 minutes  then chopped onions ,tomatoes, green chilies ,curry leaves fry for 3 Minutes
  • Step 2 Next step add turmeric powder, red chili powder, coriander powder and curry powder  mix well  then add 2cups of water along with salt cook for 5 minutes approximately
  • Step 3 Mean while take desired amount of boiled eggs make four slits  with a knife
  • Step 4 Add eggs to the gravy when it gets to  thick consistency
  • Step 5 Don’t close the lid as the eggs tend to change to  brown color
  • Step 6 Lastly garnish with coriander leaves and curry leaves serve with Rice and Rotis
