Spicy Egg Masala

This Spicy Egg curry is from South Indian Cuisine blended with boiled eggs mixed with spices serves as sides with Rice and Rotis.

Ingredients
- Boiled Eggs – 5
- Red onions large chopped – 2
- Tomatoes finely chopped – 2
- Green chilies slit- 3
- Coriander leaves chopped- 1/4 cup
- Curry leaves -few
- Coriander powder – 2 thsp
- Red chili powder – 2 tsp
- Curry Powder /Chicken Masala Powder – 2 thsp
- Turmeric powder – 1 tsp
- Cloves -2
- Cardamom -2
- Cinnamon-2
- Fennel Seeds – 1 tsp
- Mustard seeds- 1tsp
Directions
- Step 1 Take a pan add generous amount of oil then add whole garam masala cinnamon, cloves, cardamom,Fennel seeds, mustard seeds fry for 3 minutes then chopped onions ,tomatoes, green chilies ,curry leaves fry for 3 Minutes
- Step 2 Next step add turmeric powder, red chili powder, coriander powder and curry powder mix well then add 2cups of water along with salt cook for 5 minutes approximately
- Step 3 Mean while take desired amount of boiled eggs make four slits with a knife
- Step 4 Add eggs to the gravy when it gets to thick consistency
- Step 5 Don’t close the lid as the eggs tend to change to brown color
- Step 6 Lastly garnish with coriander leaves and curry leaves serve with Rice and Rotis
