This authentic recipe is blended with eggplants cooked with fresh masala paste to enhance the taste. A South Indian Cuisine Curry .

Ingredients
  • Green Eggplants -5
  • Onions chopped - 1
  • Tomatoes chopped -2
  • Green chilies sliced - 3
  • Ginger garlic paste - 2 thsp
  • Bay leaf -1
  • Cinnamon -1
  • Cloves -3
  • Cardamom - 2
  • Cumin seeds - 1tsp
  • Turmeric powder - 1tsp
  • Red chili powder - 2tsp
  • Garam masala powder - 1tsp
  • Curry leaves few
  • Coriander leaves chopped - few.
  • Coconut scrapped - 3thsp
  • Poppy seeds - 1tsp
  • Salt
  • Oil
Directions
  • Step 1 First step Wash the Eggplants well wipe them give 2 slits in the Center.
  • Step 2 Take a pan add generous amount of oil then fry the green or purple Eggplants
  • Step 3 to soft and tender 75%.done keepaside.
  • Step 4 Next step take a blender add coconut and poppy seeds along with little water grind to smooth paste.
  • Step 5 Take a pan add 2 thsp oil allow to become hot then add bay leaf, cinnamon, cardamom, cloves, cumin seeds fry for few minutes.
  • Step 6 Next add onions, green chilies, curry leaves Fry until onions turn translucent then add ginger garlic paste, tomatoes along with little salt cook until the raw smell leaves and tomatoes becomes mushy.
  • Step 7 At this point add turmeric powder, red chili powder and coconut paste mix well cook for 3 minutes.
  • Step 8 Next add fried Eggplants along with little salt mix well cook in medium flame for approximately 10 minutes.
  • Step 9 Finally add garam masala powder and garnish with coriander leaves.
  • Step 10 Serve with Rotis, Rice and Naans.
  • Step 11 Note : Cook the Eggplant in medium flame keep stirring the Masala at regular intervals.
