This recipe is authentic South Indian Cuisine blended with freshly scraped raw mango and Cooked Rice additional tempering is added to enhance the taste and texture for the recipe. A South Indian Recipe

Ingredients
  • Basmathi rice -2cups
  • Raw Mango scrapped -1 cup.
  • Ginger chopped - 1tsp
  • Green chilies - 3
  • Dry red chillies slit -2
  • Cumin seeds -2tsp
  • Chanadal -2tsp
  • Uradal -2tsp
  • Mustard seeds- 2tsp
  • Astafoetida- 1tsp
  • Sugar -1tsp
  • Salt
  • Curry leaves.
  • Roasted peanuts 3thsp.
Directions
  • Step 1 Take Basmathi Rice soak it for 15mins. Then take a pan add Rice ,1tsp of oil &3 cups of water boil till 75% done. Allow to cool for 1hr.
  • Step 2 Take a pan add oil add all the tempering
  • Step 3 Mustard seeds, Astafoetida,Uradal, chanadal, Cumin seeds, ginger ,green chilies &dry red chilies, mango scrapped, salt& turmeric powder followed by curry leaves.
  • Step 4 Stir well add rice mix well with the spatula then lastly add roasted peanuts.
  • Step 5 Mango Rice is ready for serve.
  • Step 6 Note: Basmati Rice should not be over cooked as cannot enjoy the taste as texture of rice is important for variety rice type of recipe.
