This recipe is famous Street food chaat variety from North Indian Cuisine. This recipe is blended with Dry Peas cooked in gravy then Patties is blended with Potatoes fillings that is deep fried then served with green Chutney and sweet Chutney.

Ingredients
  • Ragada Recipe Ingredients:
  • Dry Peas 1 cup.
  • (Soak overnight in water)
  • Onions finely chopped -2
  • Tomatoes finely chopped -1
  • Green chillies chopped -2
  • Ginger garlic paste -2tsp
  • Turmeric powder -1tsp
  • Red chilli powder -1tsp
  • Coriander powder 1-tsp
  • Chaat masala powder -1tsp
  • Cooking soda - 1/4 tsp
  • Coriander leaves few
  • Salt.
  • Patties Recipe Ingredients :
  • Potatoes boiled -4
  • Bread slices -3
  • Ginger minced -2tsp
  • Green chilies chopped -3
  • Onions chopped -1
  • Cumin powder -1tsp
  • Red chili powder -1tsp
  • Amchur powder -1tsp
  • Coriander leaves chopped little
Directions
  • Step 1 Ragada procedure is as follows:
  • Step 2 First step clean the soaked peas then add salt and cooking soda along with pinch of turmeric powder and water.
  • Step 3 Pressure cook by 3 to 4 whistles ( depends ).
  • Step 4 Take a pan add oil 2tsp allow it to become hot then add chopped onions along with ginger and garlic paste fry until the onions turn brown in color.
  • Step 5 At this point add green chillies, tomatoes and salt.
  • Step 6 Cook till tomatoes turn mushy then add all the dry masalas turmeric powder, red chilli powder, coriander powder and chaat masala powder mix well cook for 2 minutes.
  • Step 7 Now add the cooked dry peas mix well add 1 cup of water . Cook till the Ragada gets to semi-liquid consistency then garnish with coriander leaves.
  • Step 8 Patties procedure is as follows:
  • Step 9 Take a wide bowl add the boiled potatoes mash them well then add ginger, green chillies, onions, red chilli powder, Amchur powder ,cumin powder, coriander leaves mix the mixture well .
  • Step 10 Take the bread slices dip them in bowl of water for only a minute. Remove immediately squeeze out the water ( important step ) then add them to the potatoes mixture along with salt.
  • Step 11 Take a pan add oil less than regular deep fry allow it to become hot. Note for frying Patties keep the flame high .
  • Step 12 Then grease the palms take lemon sized potato mixture make patties drop them in hot oil fry to golden brownish color.
  • Step 13 Then arrange the patties in serving plate add the ragada on top followed by green chutney and Sweet chutney along with sev and chopped onions.
  • Step 14 Ragada Patties is ready for serve.
  • Step 15 Note: Patties should be cooked to golden brown color.
