Beetroot Biryani

: A quick and easy recipe.
This recipe is made in South Indian style blended with Beets along with additional vegetables cooked with freshly grinded Masala in Basmati Rice served with Raitha.

Ingredients
- Basmathi Rice - 2 cups
- Onions sliced - 1
- Tomatoes -2
- Green chillies - 3
- Bay leaf -1
- Cashews nuts - 1tsp
- Cinnamon - 1
- Cardamom -1
- Cloves - 2
- Star Anise - 2
- Beetroot - 2
- Carrots - 2
- Peas - 1 / 2 cup
- Turmeric powder - 1tsp
- Red chilli powder - 1tsp
- For Masala :
- Ginger - 50 gms
- Garlic pods - 4
- Green chillies -2
- Tomato -1
- Mint leaves - few
- Coriander leaves few
- Take a blender add all the masala ingredients above grind to smooth paste.
- Coriander leaves - garnish
- Salt .
- Oil.
Directions
- Step 1 First step Wash the Rice soak in water for 20 minutes.
- Step 2 Take a pan add oil 2thsp then add tempering ingredients bay leaf, cinnamon, cardamom, cloves ,cashew nuts Fry in medium flame for 2 minutes. Next add onions, green chilies fry until onions turn translucent then add tomatoes along with turmeric powder, red chili powder and ground masala paste with little salt.close the lid cook until tomato and raw smell of the paste is gone approximately 5 to 6 mins.
- Step 3 Next add the Beetroot, carrots and fresh peas mix with little water cook for 3 minutes.
- Step 4 Next step drain the water from the soaked rice then add to the masala mixture mix well.
- Step 5 At this point add 3 cups of water depends on rice add salt little along with coriander leaves.
- Step 6 Cook until Biryani turns fluffy in low flame.
- Step 7 Finally add lime juice ( optional )
- Step 8 Serve with raitha.
- Step 9 Note : cook the Masala until the raw smell leaves and until oil oozes out.
