This recipe is easy blended with few vegetables along with whole spices cooked in Basmati Rice for authentic Pulao taste.

Ingredients
  • Basmati Rice - 2 cups
  • ( soaked in water for 20 minutes)
  • Black Cardamom -1
  • Green cardamom - 6
  • Cinnamon - 3
  • Cloves - 1/2 tsp
  • Black peppercorns - 1 tsp
  • Cumin seeds - 1 tsp
  • Bay leaf - 2
  • Onions sliced- 2
  • Green chilies sliced - 2
  • Ginger garlic paste - 2 teaspoon
  • Cashew-nuts - 1 tsp
  • Potatoes sliced - 1
  • Carrots sliced -1
  • Green Beans chopped -3
  • Lukewarm water - 2 1/2 cups
  • Salt - 1 1/2 tsp
  • Unsalted butter - 1 /4 cup
  • OR
  • Oil - 2 thsp
  • Mint leaves - few
  • Coriander leaves -few
Directions
  • Step 1 First step take a pan or pressure cooker add butter allow it melt then add whole spices cinnamon, Black cardamom, Green cardamom,cloves fry a minute then add black peppercorns and cumin seeds allow to splutter in medium flame.
  • Step 2 Next step add bay leaf and mint leaves sauté for few minutes then add sliced red onions fry for 3 minutes until onions turn translucent.
  • Step 3 Next add green chilies and cashews nuts fry in medium flame fry 2 minutes then add coriander leaves fry for a minute.
  • Step 4 At this point add ginger garlic paste sauté well fry for few minutes until raw smell leaves .
  • Step 5 Next step add vegetables to the mixture mix well fry for couple of times then add soaked rice drain out the water mix slowly fry for 3 to 4 minutes.
  • Step 6 Finally add lukewarm water 21/2 cups to the rice mix well add salt keep stirring slowly allow it to boil then close the lid cook in simmer for 10 minutes.
  • Step 7 After 10 minutes remove the lid check the Pulao consistency then stir close the lid cook for 3 minutes more finally Vegetable Pulao is ready remove from flame
  • Step 8 Serve vegetable Pulao with Raitha
