Okra Curry / Bhindi Subzi

Okra Curry is very healthy and nutritious vegetarian curry blended with few ingredients and taste yum.
Ingredients
- Fresh Okra chopped- 1 cup
- Garlic chopped- 1/4 cup
- Urad Dhal - 1 tsp
- Channa Dhal - 1 tsp
- Cumin seeds - 2 tsp
- Asafoetida - 1/4. tsp
- Salt - 1tsp
- Curry leaves few
- Turmeric powder - 1 tsp
- Red Chili powder - 1 tsp
- Coriander powder - 2 tsp
- Oil - 2thsp
Directions
- Step 1 First clean the okra with water allow to dry completely with paper towel then chopped uniformly keep aside.
- Step 2 Take a pan add oil 2 thsp allow it to become hot then add Urad Dhal, Channa Dhal and Cumin seeds fry till the dhal turn light brown in color then add Asafoetida and chopped garlic fry until garlic turn light brown in color .
- Step 3 At this point add few curry leaves allow to fry for few seconds then add chopped okra mix well with spatula then add salt 1 tsp fry for 3 minutes in medium flame.
- Step 4 Next step close the lid allow the okra / Bhindi to fry in high flame for 3 minutes.
- Step 5 Remove the lid at this point add turmeric powder, red Chili powder and coriander powder mix well allow to get coated with the okra uniformly.
- Step 6 Next step fry for few minutes then close the lid allow the okra to cook to crispy in medium flame for 3 to 4 minutes.
- Step 7 Remove the lid mix well Okra Curry is ready for serving with Rotis or Rice Varieties.
