This recipe is very famous in Tamil Cuisine serves as sides for Parotta, Idli and Dosa Varieties. Its blended with Vegetables Beans, Carrots and choyote (Chow Chow) can also use Potatoes and Cauliflower up to your choices.
Ingredients
- Fresh Masala:
- Shallots (Small red Onions) - 5
- Fresh coconut- 1/4 cup
- Cashew-nuts- 2 thsp
- Poppy seeds- 2tsp
- Fennel seeds- 2tsp
- Cinnamon- 2
- Cloves -2
- Cardamom-2
- Ginger chopped -3 pieces
- Garlic pods -5
- Green chilies- 3
- Add all the above ingredients in blender along with water 1/4 cup grind to smooth paste.
- Red Onion Chopped-2
- Tomatoes chopped-1
- Coriander leaves chopped-1
- Bay leaf -2
- Cardamom-3
- Cinnamon-3
- Fennel seeds- 1 tsp
- Clove -2
- Chayote (Chow Chow) Chopped - 1/2 cup
- Green Beans Chopped- 1/4 cup
- Carrots chopped-2
- Red Chilies Powder- 1 tsp
- Turmeric powder - 1/4 tsp
- Coriander powder- 1 tsp
- Garam Masala powder - 1 tsp
- Salt - 1.5 tsp
- Canola oil - 3 thsp
Directions
- Step 1 First step take a pressure cooker pan add oil 3 thsp allow it to become hot in medium flame then add cinnamon, Cloves, Cardamom fry for few seconds then add bay leaf and coriander leaves sauté for minute.
- Step 2 Next add chopped onions fry for 5 minutes until onions turn translucent then add tomatoes add salt 1 tsp sauté until tomatoes turn mushy .
- Step 3 At this point add Red Chilli powder , Turmeric powder and coriander powder fry for 3 minutes then add the vegetables mix well fry for 2 minutes.
- Step 4 Next step add the freshly grinded masala to the vegetables mix slowly add little water cook in medium for 5 minutes until the raw smell of the masala leaves.
- Step 5 Next step add garam masala ,salt little and coriander leaves close the lid add the whistle pressure cook with only 2 whistles only.
- Step 6 After 10 minutes remove the whistle slowly open the lid white Vegetable kurma smells aromatic with all Masala flavors induced.
- Step 7 Cook for few minutes in medium flame then garnish with chopped coriander leaves.
- Step 8 Serve with Rotis , Dosa , Poori.
