This Pulao Recipe is blended with fresh mint leaves, Green Peas cooked in Basmati with fresh masala paste . Pudina Peas Pulao is served with Onion Raitha.

Ingredients
  • Basmati Rice - 2 cups
  • Onions sliced - 1
  • Tomatoes chopped- .2
  • Butter- cube
  • Canola oil - 2 thsp
  • Coriander leaves chopped- 1/2 cup
  • Bay leaf -3
  • Cashew-nuts- 2 thsp
  • Black Cardamom - 2
  • Star Aniseed -2
  • Green Cardamom-3
  • Carrots chopped- 1
  • Green Peas - 1/2 cup
  • Turmeric powder- 1/2 tsp
  • Red Chili powder - 1/2 tsp
  • Coconut Milk - 1 cup
  • Ghee - 2 tsp
  • Salt - 2 tsp
  • Cashew-nuts- 1/4 cup
  • Green Masala:
  • Mint leaves- 1/2 cup
  • Green Chilies- 3
  • Ginger- 50 gms
  • Cloves - 5
  • Cinnamon-3
  • Cloves -3
Directions
  • Step 1 First step soak Basmati Rice in water for 25 minutes.
  • Step 2 Take a pressure cooker pan add butter a cube allow to melt in medium flame then add canola oil 2 thsp add bay leaves along with whole garam masala fry for few seconds then add cashewnuts fry to light brown in color.
  • Step 3 At this point add sliced red onions fry until onions turns translucent for 3 minutes.
  • Step 4 Next add tomatoes chopped along with salt , turmeric powder 1/2 tsp and Red Chili powder 1/2 tsp mix well cook until tomatoes turn mushy.
  • Step 5 Next step take a blender add mint leaves, ginger, garlic, green chilies, cinnamon and cloves add little water grind to smooth texture.
  • Step 6 At this point add freshly grinded paste to to the tomatoes mixture add few coriander leaves few mix well allow it to boil close the lid cook for 5 minutes in medium flame.
  • Step 7 After 5 minutes remove the lid then add coconut milk 1 cup mix well cook until raw smell leaves oil oozes out .
  • Step 8 Meanwhile drain out the water from Soaked Basmati Rice keep aside.
  • Step 9 Next add chopped carrots, green peas and salt. 1 tsp mix well allow to cook for 3 minutes.
  • Step 10 At this point add Basmati Rice mix slowly with the spatula without breaking the rice .
  • Step 11 Add 1 cup of water to the mixture since the mixture is thin consistency mix well allow the mixture to boil then close the lid keep the flame in low cook for 10 minutes
  • Step 12 Note : Whistle is not added .
  • Step 13 In between check the consistency of the Pulao by removing the lid then add fried cashews in ghee to the Mint Green Peas Pulao .
  • Step 14 Then close the lid cook until water dries up finally add few coriander leaves.
  • Step 15 Remove the lid Pudina Peas Pulao is ready for serving with Raitha.
  • Step 16 Note : Don’t add too much water as the Rice texture gets sticky than fluffy.
