This very famous snack in North Indian cuisine tasty and yumminess. Crispy thick outer layer with lentil stuffing served with green and sweet Chutney.

Ingredients
  • Dough:
  • All-purpose flour- 2cups.
  • Oil or melted ghee- 4tsp.
  • Salt.
  • Fillings:
  • Moong Dhal- 1/2 cup
  • (soaked in water for 3 hours )
  • Cumin seeds- 1tsp
  • Crushed coriander seeds- 1tsp
  • Fennel seeds- 1/2 tsp
  • Astafoetida pinch
  • Ginger chopped- 2tsp
  • Green chilies chopped- 2
  • Garam Masala- powder optional.
  • Red chili powder- little
  • Amchur powder- pinch
  • Salt
Directions
  • Step 1 The first step take a bowl add 2 cups of all-purpose flour, salt, oil or ghee mix well add water little by little to form a stiff dough.
  • Step 2 Allow the dough to rest for 15 Minutes.
  • Step 3 Filling:
  • Step 4 Take a blender drain out the water from the Soaked Moong Dhal grind it to the mixture.
  • Step 5 Not a smooth mixture.
  • Step 6 Take a pan add oil 2tsp allow it to become hot then add cumin seeds, coriander seeds, fennel seeds, Astafoetida, fry in the low flame then add green chilies, ginger fry for few minutes.
  • Step 7 At this point add dhal mixture, red chili powder, Garam Masala powder with salt mix well cook for 5 minutes until the mixture becomes light brown in color.
  • Step 8 Finally, add amchur powder mix well with the spatula.
  • Step 9 Remove from the flame allow the mixture to cool completely.
  • Step 10 Kachoris:
  • Step 11 Take a wide bottomed pan add a generous amount of oil allow it to become hot.
  • Step 12 Meanwhile, take the dough to take lemon sized balls with a rolling pin make small circles.
  • Step 13 Take the dough circle add the fillings 2tsp just seal the edges of the dough uniformly.
  • Step 14 Then with the rolling pin make small thick circle.
  • Step 15 Now deep fry in oil with low flame cook until crispy golden brown color takes approximately 10 Minutes. Repeat the procedure to make Kachoris.
  • Step 16 Serve with mint chutney and sweet chutney.
  • Step 17 Note: Deep fry kachoris in low flame 🔥
