Khubani Ka Meeta /Apricots Pudding with vanilla Ice-cream garnished with Almonds and edible rose petal

This sweet delight is very famous in Hyderabad made during festival seasons. It’s blended with Apricots cooked with ingredients served vanilla Ice-cream taste yum.
Ingredients
- Apricots (Seeds) - 2 Cups
- Sugar - 1 cup
- Cardamom Powder- 1/2 tsp
- Nutmeg powder- pinch (Optional)
- Rose water - 1/2 tsp
- Vanilla Ice-cream - 2 scoop
- Almonds sliced - few
- Edible Rose Petals- few
Directions
- Step 1 First take 2 cups of Apricots in a bowl add water soak for 6 hours.
- Step 2 Next after 6 hours drain the water keep aside.
- Step 3 Discard the seeds keep aside used for garnishing.
- Step 4 Take wide bottom pan add Apricots, sugar, cardamom powder and soaked water allow to cook in medium flame by stirring at regular intervals for 5 minutes.
- Step 5 Close the lid allow the Apricots to cook until soft in medium low flame for 25 to 30 minutes.
- Step 6 Finally remove the lid as the mixture shouldn’t dry up mash the Apricots with potato masher finally add nutmeg powder and rose water mix well cook for 3 minutes.
- Step 7 Remove from flame allow the mixture to cool completely and garnish with almonds.
- Step 8 Serve with vanilla Ice-cream.
