This sweet delight is very tasty and delicious made with Pistachios along with few ingredients to enhance the taste and texture to the recipe.

Ingredients
  • Pistachio powder - 2 cups
  • Granulated Sugar- 2 cups
  • Pistachio Almond chunks - 1/4 cup
  • Pistachio Extract ( essence) - 1/2 tsp
  • Or Rose Essence.( optional)
  • Cardamom powder- 1/2 tsp
  • Milk powder- 3 thsp
  • Water - 1/2 cup
  • Green color - 1 drop
  • Ghee - 1 tsp
  • Garnish:
  • Edible Rose Petals
  • Pistachios
Directions
  • Step 1 First step soak pistachios in water overnight then remove the skin allow to dry completely for 2 hours on paper towel.
  • Step 2 Then take a pan add pistachios in low flame slightly dry roast for 5 minutes then allow to cool completely .
  • Step 3 Take a blender grind to smooth powder keep aside.
  • Step 4 ( Note : I made the pistachio powder one day prior.)
  • Step 5 Take a wide nonstick pan add granulated sugar 2 cups along with water 1/2 cup allow to boil in medium flame for approximately 6 to 7 minutes to get one string consistency .
  • Step 6 Next add pistachios powder, Milk powder, Pistachios almonds chunks keep stirring vigorously for 5 minutes in low flame.
  • Step 7 Meanwhile grease a baking pan or tray with ghee set aside.
  • Step 8 After 5 minutes add green color , pistachios essence / extract, cardamom powder mix well cook until the mixture leaves the pan gets to thick consistency drop on greased pan.
  • Step 9 Next with flat spatula press uniformly finally add few pistachios and edible rose petals.
  • Step 10 Allow to cool completely then with sharp knife cut to desired slices pistachio Burfi is ready for serving.
