This recipe is very famous in Andhra Cuisine blended with gongura leaves its distinctly taste sour . it’s served with steaming hot White Rice ( not Basmati) few drops of ghee taste yum. ** My all-time favorite combo**

Ingredients
  • Fresh Gongura Leaves- 1 Large Bunch
  • Garlic pods - 3
  • Dry Red Chilli- 10
  • Fenugreek seeds- 1/4 tsp
  • Mustard seeds- 1 tsp
  • Urad Dhal- 1 tsp
  • Coriander seeds- 2 tsp
  • Cumin Seeds- 1 tsp
  • Channa Dhal-
  • Tempering:
  • Green chilies sliced- 2
  • Dry Red Chilli- 2
  • Garlic chopped- 2 thsp
  • Mustard seeds- 1/2 tsp
  • Urad Dhal- 1/2 tsp
  • Cumin seeds - 1 tsp
  • Channa Dhal - 1 tsp
  • Curry leaves - few
  • Astafoetida- pinch
  • Red Onion sliced-1
  • Salt
  • Canola oil
Directions
  • Step 1 Take a nonstick pan or heavy bottom pan add oil 2 thsp allow it to become hot in medium flame add dry Red Chilli (10) fry for few seconds then add fenugreek seeds, mustard seeds, urad dhal, coriander seeds, cumin seeds fry for 2 minutes then add Channa Dhal fry until all ingredients is lightly roasted don’t burn it . Transfer on a plate keep aside.
  • Step 2 Meanwhile rinse the gongura leaves discard the stalk in water few times drain the water keep aside.
  • Step 3 Take another pan add the gongura leaves fry for few seconds then add oil 2 thsp mix well with spatula. Then add few garlic pods fry for 3 minutes then closes the lid cook for 2 minutes.
  • Step 4 After 2 minutes remove the lid gongura leaves color changes quantity is reduced fry for few more minutes remove from flame .
  • Step 5 Take a blender add the gongura leaves along with roasted ingredients add salt grind to smooth texture ( don’t add water ).

  • Step 7 Take a pan add oil 2thsp then add sliced green chilies, dry red chilies, chopped garlic ,mustard seeds, Urad Dhal, Cumin seeds, Channa Dhal, Astafoetida pinch , curry leaves then add gongura mixture mix well with spatula then add sliced onions ( optional)
  • Step 8 Cook the pachadi for 3 to 4 minutes.
  • Step 9 Transfer on a serving dish serve with White Rice , Rotis .

  • Step 11 Gongura Pachadi is best consumed for two weeks please keep refrigerated
