This recipe is quite unique made in Dhaba style famous in North Indian cuisine.Chickpeas / Channa is blended with freshly blended Masala along with additional dry masala ingredients to enhance the taste and texture to the recipe. Served with Poori, Pulao Varieties.

Ingredients
  • Potli:
  • Muslin Cloth
  • Cloves -6
  • Cinnamon Sticks- 6
  • Black Cardamom - 1
  • Star Aniseed- 1
  • Peppercorns- 1/2 tsp
  • Teabag - 1
  • Fresh Masala:
  • Large Red Onion- 1
  • Garlic pods - 7
  • Ginger - 50 gms
  • Green Chilies-1
  • Chickpeas- 1.5 cups
  • Bay Leaves-2
  • Cinnamon-3
  • Cumin seeds- 1 tsp
  • Turmeric powder- 1 tsp
  • Red Chilli powder- 1 tsp
  • Coriander powder- 1 tsp
  • Cumin powder- 1 tsp
  • Channa Masala Powder - 2 tsp
  • Black Pepper Powder- 1/2 tsp
  • Kashmiri Red Chilli Powder- 2 tsp
  • Fresh Coriander Leaves- few
  • Large Tomatoes-3
  • Boiled Chickpea blended- 1/2 cup
  • Garam masala-1/2 tsp
  • Salt - 1.5 tsp
  • Oil - 2 thsp
Directions
  • Step 1 First step take 1.5 cups of Chickpeas / Channa soak in water overnight for 8 hours.
  • Step 2 After 8 hours transfer in steel container add salt 1 tsp , add Potli ( with all spices and teabag) in muslin cloth pressure cook with 4 to 5 whistles.
  • Step 3 Allow the pressure to reduce cool completely keep aside.
  • Step 4 Take a wide bottom pan add oil 2 thsp allow it to become hot then add bay leaves, cinnamon and cumin seeds mix with spatula sauté for 2 minutes.
  • Step 5 Next step add freshly grinded masala paste mix with the spatula at regular intervals cook for 3 to 4 minutes until the raw smell leaves then add dry masalas one by one turmeric powder, Red Chilli powder,Coriander powder, Cumin powder, Channa Masalas Powder, Black Pepper powder , salt -1tsp cook for minutes in medium flame.
  • Step 6 At this point add tomato purée blended with 3 large tomatoes.
  • Step 7 Next add Kashmiri Red Chilli powder and Freshly chopped coriander leaves mix well close the lid cook in medium flame for 5 minutes until oil oozes out from the masala.
  • Step 8 Next step add boiled chickpeas blended 1/2 cup, garam masala 1/2 tsp mix with spatula cook for 3 minutes.
  • Step 9 Meanwhile add the Chickpeas boiled water to the gravy allow to cook for few minutes finally add the boiled Channa to the gravy mixture cook until the gravy gets to thick consistency.
  • Step 10 Finally add Ghee 2 tsp to the Channa Masala Gravy.
  • Step 11 Dhaba style Channa Masala Gravy Is ready for serving with hot Fluffy Poori, Pulao Varieties.
