Pineapple Kesari

This is very popular sweet Delight blended with semolina and Pineapple Chunks made during festival season as offerings.
Ingredients
- Semolina - 1 cup
- Granulated Sugar- 1 cup
- Pineapple Chunks - 1/2 cup
- Water - 2 cups
- Ghee - 3 thsp
- Saffron threads - little
- Cashew-nuts- 2 thsp
- Raisins- 2 thsp
- Pistachios - little
- Cardamom powder- 1/4 tsp
- Pineapple Extract- 1/4 tsp ( optional)
Directions
- Step 1 First step heat ghee in a pan 2 thsp roast the cashew nuts and raisins . Keep aside.
- Step 2 Next add Semolina ( 1 cup ) fry in low flame until it turns aromatic to light brown color.
- Step 3 Transfer on a plate.
- Step 4 At this point on the same pan add ghee little add pineapple chunks fry in low flame sauté for 3 to 4 minutes .
- Step 5 Next step add water 2 cups along with saffron threads bring to boil then add roasted semolina slowly in low flame keep stirring vigorously without lumps at this point add sugar ( 1 cup) mix well with spatula close the lid cook for 2 minutes.
- Step 6 Then remove the lid add pineapple extract, cardamom powder and roasted cashew-nuts and raisins cook until water is evaporated.
- Step 7 Finally add little ghee and smear pineapple kesari garnish with pistachios.

- Step 9 If needed add Yellow color a pinch and don’t burn the semolina while roasting.
