Besan Burfi

This sweet delight is popular in North Indian cuisine blended with Gram flour along with additional ingredients to enhance the taste and texture to the recipe.
Ingredients
- Gram Flour - 250 gms
- Granulated sugar- 150 gms
- Melted Ghee - 100 gms
- Cardamom powder-- 1tsp
- Almonds sliced- 2thsp
- Pistachios chopped- 1thsp
- Yellow color- pinch ( optional)
- Edible Rose flowers- garnish.
Directions
- Step 1 Take a wide pan add ghee little then add gram flour in medium flame keep stirring until the gram flour gets to pungent smell color changes to light brown approximately takes 20 to 25 minutes keep adding ghee stirring with the spatula add pinch of yellow color if desired. Next step remove from flame keep aside to cool .
- Step 2 Next step take a pan add sugar and water to form sugar syrup with one thread consistency takes about 10 minutes then add cardamom powder.
- Step 3 Meanwhile grease the plate with little ghee or oil keep aside.
- Step 4 Next step slowly add sugar syrup to the gram flour mixture keep stirring continuously until the mixture get to slightly thick consistency pour in the greased plate.
- Step 5 Take a flat spatula press uniformly then add Almonds, Pistachio allows the mixture to cool for 10 minutes then take knife cut the besan burfi with the desired shape.
- Step 6 Keep in refrigerator for 10 minutes then remove slice the Besan Burfi.
- Step 7 Note- Pungent Smell and color Changes of the Gram Flour is the important step.
