This recipe is healthy and popular in South Indian cuisine serves as sides for Sambhar and Rasam varieties.

Ingredients
  • Beetroot - 2 ( Large)
  • Onion chopped - 1
  • Dry Red Chilli - 5
  • Curry leaves - few
  • Mustard seeds - 1 tsp
  • Urad Dhal - 1 tsp
  • Astafoetida- pinch
  • Turmeric powder- 1 tsp
  • Red Chilli powder - 1 tsp
  • Water - 1 /4 cup
  • Salt - 1.5 tsp
  • Coconut scrapped - 1/4 cup
  • Sesame oil - 2 thsp ( optional)
Directions
  • Step 1 Take a wide bottom pan add sesame oil 2 thsp allow it to become hot then add mustard seeds allow to splutter at this point add Urad Dhal, Dry Red Chillis fry for few minutes.
  • Step 2 The next step add chopped onions fry until it turns translucent add few curry leaves, Astafoetida fry for few minutes.
  • Step 3 At this point add chopped Beetroots mix with the spatula sauté in medium flame for 2 to 3 minutes then add turmeric powder, red Chilli powder mix all together.
  • Step 4 Next add water 1/4 cup at this point add salt mix uniformly by using the spatula.
  • Step 5 Next close the lid cook the Beetroot in medium flame for 5 minutes.
  • Step 6 After minutes remove the lid cook for 3 minutes until water dries up from the Beetroot curry.
  • Step 7 At this point add scrapped fresh coconut to the curry mix well fry for 2 minutes until moisture oozes out.
  • Step 8 Beetroot Curry is ready for serving with Sambhar and Rasam varieties
